We’re lucky enough to be able to grow lemons almost all year round, but this time of year is a particularly good time for them. There are loads of things you can make with lemons; hot drinks, quick and easy slices, muffins, loaves, lemon meringue pies, even just adding the juice to the icing on a plain cake will really blast the flavour!
Recipe one)) Lemon Honey
This recipe is an old favourite, from The Edmonds Cookery Book – First Edition. It’s a great recipe to make ahead of time and store in the refrigerator for those unexpected times when you need to whip up something in a hurry.
Ingredients:
4 lemons
125 grams butter
2 cups sugar
4 eggs, beaten
Method:
Grate only the yellow part of the lemon (avoid white part, as it is bitter). Squeeze the lemons and strain the juice. Melt the butter in the top of a double boiler. Stir in the sugar and lemon juice until the sugar is dissolved. Add beaten eggs and lemon rind. Place over boiling water and cook, stirring all the time until mixture thickens. Pour into sterilised jars. Store in the refrigerator. Makes about 4 x 250 ml jars.
Cook’s Tip: The secret is to make sure you use the double boiler or a water bath, not straight on the heat. It takes a bit of time but is worth the effort.
