You don’t have to be Irish to celebrate St. Patrick’s Day! March 17 is the one day of the year when people of all backgrounds enjoy ‘breaking out the green’ and celebrating all things Irish. That usually involves food and drink, so here are a couple of our favourites to get you buzzed up.

Homemade Baileys

This creamy drink is actually so easy to make you could feasibly always have a jar of it in your fridge. You ready? Put on a pot of coffee and pull out the blender. Ingredients: • 1 cup cream • 1 can sweetened condensed milk • 1 2/3 cups Irish whiskey (we used Jameson) • 1 teaspoon instant coffee granules • 2 tablespoons chocolate syrup • 1 teaspoon vanilla extract • 1 teaspoon almond extract(optional) Method: In a blender, combine all the ingredients. Blend on high for 20 to 30 seconds. Store in a tightly sealed container in the refrigerator. Shake well before serving. Lovely poured over icecream! Will keep for 2 months, refrigerated.

Her experience in media is extensive and includes approximately 15 years as Creative Director for The Radio Network, writing, and managing the writing of radio advertising, mainly in Invercargill and Greymouth. In the late 1990’s she transferred to Christchurch, moving into an Account Management role with 91ZM. In 2007 she and a business partner set up Essence Mid Canterbury, very quickly adapting her radio-writing skills to print media. Judy became sole owner of Essence Mid Canterbury in June 2014.
